Restaurants & Pizzerias
Artisanal Italian food for Italian and international restaurants and pizzerias in the UAE: pasta, cheese, extra virgin olive oil, sauces and preserves, and pork-free cured meats.
Dar Sapori supplies Italian and international restaurants and pizzerias across the UAE with pasta, Italian cheese, extra virgin olive oil, sauces and preserves, and pork-free cured meats. Head chefs and owners can match ingredients to a menu, test samples in their own kitchen and order a consistent range from one supplier that sources directly from family-run Italian producers.
What does a restaurant need from an Italian food supplier?
An independent restaurant lives or dies on a handful of ingredients. The pasta, the tomato, the olive oil, the cheese on the pass: if any of them changes, regulars notice before the chef does. A restaurant needs a supplier that holds a specification, delivers the same product every week, and does not swap producers when a container is late.
Dar Sapori buys directly from family-run Italian producers and quotes each restaurant by product, format and pack size. There is no standard case list. The range is matched to the menu, from a 12-cover trattoria to a multi-site group with a central kitchen.
How do you match ingredients to a menu?
Send the menu. Dar Sapori reads it dish by dish and proposes the Italian ingredients and formats that fit:
- Pasta: bronze-die shapes for each sauce, with cooking and holding behaviour tested for the kitchen's pass [TO CONFIRM: shapes and egg or fresh pasta availability]
- Cheese: the right age of hard cheese for grating versus shaving, and fresh cheeses planned around the service calendar
- Extra virgin olive oil: a cooking oil in catering formats and a finishing oil in glass, chosen by flavour profile
- Tomatoes and preserves: tins sized to weekly usage so nothing sits open
- Pork-free cured meats: beef bresaola, turkey and halal-certified salumi for antipasti and pizza toppings

What does a pizzeria need?
A pizzeria's ingredient list is short and unforgiving: flour, tomato, cheese, oil, toppings. Flour must match the fermentation time and oven temperature; a long cold ferment needs a stronger flour than a same-day dough. Tomatoes should be whole peeled or pulp with low acidity, and San Marzano DOP where the menu claims it. Cheese for the oven must melt without releasing too much water. Toppings must be pork-free for the UAE market, which rules out traditional pork salami and pork prosciutto; Dar Sapori's halal-certified salumi and beef bresaola fill that gap.
[TO CONFIRM: availability of fior di latte, mozzarella formats, pizza flour types and strengths.] Share the dough recipe, oven type and the pizza menu, and Dar Sapori will propose products to test.
How do you control food cost without changing the plate?
Format is the lever. Buying grated hard cheese for the pizza station and wedges for the pass avoids paying for labour the kitchen does not have. Splitting olive oil into tins for cooking and glass for finishing puts the expensive oil only where guests taste it. Catering tins of tomato cost less per portion than retail jars, provided weekly usage is high enough to use them before they spoil. Dar Sapori quotes formats against actual weekly volumes, not list prices, so the offer reflects how the kitchen works.
Can a non-Italian restaurant order from Dar Sapori?
Yes. Steakhouses use aged balsamic and extra virgin olive oil; Mediterranean and Levantine menus use Italian cheese, nuts and preserves; fine-dining tasting menus use truffles. A restaurant does not need an Italian name to order from the range. Send the menu and Dar Sapori will suggest the lines that fit.
How does ordering and delivery work?
After samples and a written quote, restaurants order against the agreed range [TO CONFIRM: ordering channels, cadence, order cut-off and minimum order for single-site restaurants]. Deliveries run from Dar Sapori's base in JLT to restaurants across Dubai, Abu Dhabi and the Northern Emirates, with chilled lines under refrigeration [TO CONFIRM: cold-chain details].
