What makes San Marzano DOP tomatoes different?

Pomodoro San Marzano dell'Agro Sarnese-Nocerino DOP is grown in a defined area of Campania, in the volcanic soil between Vesuvius and the Sarno river. The fruit is long, with thick flesh, few seeds, thin skin and low acidity. It is harvested by hand and packed whole or in fillets, never as pulp or passata.
