Where does the cheese come from?

What do DOP and ageing terms mean?

DOP (Denominazione di Origine Protetta) is the Italian form of the EU Protected Designation of Origin. A DOP cheese is made in a defined area, from local milk, by a production method set out in a specification and checked by an independent control body. The label carries the EU logo and the consortium mark.

Ageing terms matter for cost and use:

  • Parmigiano Reggiano DOP: minimum 12 months; 24 and 36 months are common choices for restaurants
  • Grana Padano DOP: minimum 9 months; "Riserva" means at least 20 months
  • Other hard and semi-hard cheeses: ageing is stated on each specification sheet
